Notes

Peel and slice the ginger thinly. Boil water in a pot and add the ginger slices. Simmer for 10–15 minutes to extract the flavor. Remove from heat and strain into a jug or cup. Stir in honey or sugar while warm. Add lemon juice if desired and let it cool for a refreshing drink. Serve hot or chilled, garnished with mint if you like.
