There's a particular sound in a Maharashtrian kitchen in the days before Ganesh Chaturthi &#x2014; the soft thud of dough being rolled, over and over, as puran poli comes together in batches large enough to feed everyone who'll stop by. The puran, a slow-cooked filling of chana dal and jaggery scented with cardamom and nutmeg, is the heart of the dish; the dough is really just a vessel, rolled thin enough that the sweet filling shows faintly through when you hold it to the light. It's offered first to Ganpati as bhog before anyone else gets a piece, then eaten warm off the tawa with a spoonful of ghee melting into it. Variations of this stuffed sweet flatbread show up across Maharashtra, Karnataka and Gujarat under different names, but the Ganesh Chaturthi version, rich with jaggery and ghee, is the one most people grew up on.</description></oembed>
